Zesty Steamed Pudding With Aperol Is Spring's Brightest Dessert
A light and zesty steamed pudding has become a standout dessert for spring. The recipe combines citrus flavours with a delicate texture, finished with a touch of liqueur. Served warm, it pairs perfectly with whipped cream for an elegant treat.
The batter starts with 150g of self-raising flour, mixed with 2 tablespoons of caster sugar. A lightly beaten egg at room temperature and 50g of melted unsalted butter are folded in to create a smooth consistency. For brightness, the finely grated zest of one large orange is stirred through, along with 60ml of Aperol liqueur.
Three oranges, peeled and with all pith removed, provide fresh segments that are gently folded into the mixture. The batter is then divided into small moulds and steamed in a bamboo steamer for 12 minutes, ensuring a soft, fluffy result. Once cooked, the puddings are decorated with a dusting of sifted icing sugar and a scattering of chopped pistachios. The dish is best enjoyed immediately, with a side of lightly whipped cream to balance the citrus notes.
This steamed pudding offers a refreshing alternative to heavier desserts. The combination of Aperol, fresh orange, and pistachio garnish creates a vibrant finish. Serving it warm with cream makes it an ideal choice for gatherings or a special after-dinner treat.
