Valentino's Italian Restaurant has been serving its community since 1963. Founded by Martin’s Uncle Joe Valentino and his wife Sylvia, the restaurant is now owned by Martin and Dawn Barcellos. Martin, who is also the chef, recently shared a recipe for his popular Sautéed Fresh Corn dish. Martin Barcellos began working at Valentino's in 1975. He learned to cook from his mother and grandmother. In 1994, he decided to pursue a career as a chef and now enjoys creating new dishes for his customers.
The Sautéed Fresh Corn recipe uses simple ingredients: 4 ears of fresh corn, 4 cloves of garlic, 3 tablespoons of olive oil, salt, and pepper. The corn is sourced from Strambi Farm Direct in Centerville, CA. To prepare the dish, the corn is removed from the cob and added to a sauté pan with olive oil over medium heat. After 5 minutes, the garlic is added, the heat is reduced, and the mixture cooks for another 5 minutes. The dish is finished with salt and pepper to taste.
