Strasbourg Bake: A Creamy, Cheesy Twist on Comfort Food

The Strasbourg Bake, also called Tête de Moineau, is a hearty dish of golden-brown noodles wrapped in a rich, creamy ground meat sauce. It works well for both everyday meals and special gatherings. The recipe starts with 200g of tagliatelle or a pasta of choice, cooked until tender. Meanwhile, 250g of mixed ground meat is browned with onions. Spices and a splash of red wine are then stirred in to build flavour.

The cooked pasta is combined with the meat mixture. A velvety, buttery cream sauce made with milk, cream, and spices is folded through. The dish is topped with 100g of grated cheese and baked until golden.

Ham is added as a centrepiece, giving the bake a salty, smoky depth. For extra taste, garlic, pepper, and fresh herbs like parsley or chives can be mixed into the sauce. The finished bake is creamy, fragrant, and satisfying. It pairs well with an Alsatian white wine such as Riesling or Gewürztraminer for fruity, floral notes. A Pinot Noir also works, offering a balance of fruitiness and acidity.
