Quảng Trị's herring dishes win hearts with freshness and tradition
In Quảng Trị Province, herring dishes are a local favourite. Thrương Thị Lài and Trương Thị Đào are among the vendors serving grilled and braised herring to residents and tourists alike. Their preparations highlight the fish’s natural flavours and freshness. Thrương Thị Lài runs her business in Cửa Tường Commune, where she selects only the freshest, fattest herring. She sells damaged fish as bait and keeps the best for her dishes. Fresh herring is priced at VNĐ30,000 per kilogramme, while grilled fish costs between VNĐ50,000 and VNĐ60,000.
Lài prepares grilled herring with care, ensuring even cooking to preserve its sweetness and aroma. She also offers dipping sauces, including fish sauce, soy sauce, and salt with lime juice. Her braised herring features a thick, sweet tomato sauce that subtly balances the fish’s tangy taste.
Trương Thị Đào has sold grilled herring for decades, beginning her cooking early each morning. Grilled herring is especially popular in the summer. Other local specialities include braised herring with pork belly and herring salad, both widely enjoyed in the province. Local vendors like Lài and Đào serve herring in various ways, from grilled to braised dishes. Their methods ensure the fish’s freshness and flavour remain central to each meal. These dishes continue to attract both locals and visitors to Quảng Trị Province.
