Alastair McLeod's bold steak recipe transforms weeknight dinners with Sicilian flair
Alastair McLeod has shared a new recipe to upgrade steak night. The Weekender host demonstrated it on Sunrise, pairing perfectly cooked beef with caramelised cauliflower and a fresh Sicilian olive salsa. The dish balances rich, smoky flavours with bright, zesty ingredients. The recipe starts with the steak, seared to medium rare in just 2-3 minutes on each side. For the caramelised cauliflower, sliced cauliflower is fried in butter until deep golden-brown. It is then simmered with milk and cream before blending with parmesan and Cabernet Sauvignon vinegar.
The mint and Sicilian olive salsa brings a burst of freshness. It combines golden shallots, Sicilian olives, olive brine, lemon zest and juice, white wine vinegar, lilliput capers, and mint. The dish is served on warm flatbread, tying all the elements together.
McLeod also revealed he will cook at Vivid Sydney’s Fire Kitchen. He joins Jack Brown and Sander Nooij for the festival’s final day. The recipe offers a flavourful twist on a classic meal. The combination of smoky steak, creamy cauliflower, and tangy salsa creates a balanced plate. McLeod’s demonstration on Sunrise gives viewers a chance to try it at home.
