The idea emerged during her internship at Ural State Agrarian University. The project stood out among 27 entries in the 'Agricultural Product Processing Technology' category. Its bold flavour concept and strong scientific backing impressed the judges. Olga Neverova, an associate professor and candidate of biological sciences, guided Olesya through the process.

The filling combines lemon zest, lavender essential oil, and citrus pectin. No artificial colours or flavours are used. Development of the technology took roughly six months.

Functional foods, like this yogurt, provide extra health benefits beyond basic nutrition. The team now aims to refine the recipe further. They also plan to organise tasting sessions and gather consumer feedback. The project advances with a focus on improvement and market testing. Its natural ingredients and innovative approach set it apart in the competition. The next steps involve perfecting the formula and assessing public reaction.
