Vine Street Chicken Co. Brings Nashville-Style Heat to Kansas City's Jazz District
A new pop-up chicken restaurant, Vine Street Chicken Co., is coming to Kansas City's Historic 18th & Vine Jazz District. This chicken restaurant will launch inside the 18th & Vine Kitchen, offering Nashville-style hot chicken with bold, global-inspired flavours. Led by chef Annie Kapsner, the concept aims to bring something fresh to a neighbourhood known for its barbecue scene.
The restaurant is a partnership between chef Justin Clark and Vine Street Brewing Co., blending fried and grilled chicken with craft beer. A soft launch is planned for mid-February 2026, with a full opening set for late February.
The idea for Vine Street Chicken Co. grew from Vine Street Brewing Co.'s long-term vision. The original plan for the 2000 Vine project always included a full food concept, which helped attract the brewery to the space. Early attempts with food trucks proved unreliable, so the team decided on a permanent in-house kitchen.
The menu will focus on comfort food with a twist. Dishes include chicken sandwiches, half chickens, legs, thighs, and tenders, all served with a range of sauces. Standout items feature gochujang-glazed tenders and fermented chili sides, setting it apart from local BBQ spots. Customers will order at self-service kiosks and collect their meals when ready, with seating spread across the taproom.
Co-founder Kemet Coleman sees the chicken and beer pairing as a tribute to hip-hop culture. The brewery hopes to turn the space into the 'living room of Kansas City', offering food, drinks, and entertainment for families and friends. Once fully established, the venue plans to expand into the building's central area, adding more dining and event space.
The addition of Vine Street Chicken Co. gives neighbours another reason to visit. The brewery aims to become a community hub, blending good food, craft beer, and a welcoming atmosphere.
The soft launch begins in mid-February, giving locals a chance to try the menu before the official opening. Vine Street Chicken Co. will serve Nashville-style hot chicken with unique global flavours, alongside Vine Street Brewing Co.'s drinks. The partnership marks a new chapter for the 18th & Vine neighbourhood, combining food, beer, and entertainment under one roof.
