A new bistro, The Kitchery at Coleburn, is set to open in late autumn 2023 as part of the Whisky Resort at Coleburn. The project follows approval from Moray Council and marks the first phase of a multi-million-pound investment in the area.
The owners of Coleburn Distillery have started construction, transforming the former Piggery building into a stylish dining space while keeping its original charm. The bistro will offer a mix of traditional and modern design. Warm leathers, natural timbers, and aged copper will blend with backlit rippled glass to create a welcoming atmosphere. Inside, guests will find a relaxed dining area for up to 62 people, a private dining room, and a well-stocked bar.
Sustainability is a key focus, with a biomass boiler installed to reduce environmental impact. The menu will highlight locally sourced Scottish produce, ensuring fresh and seasonal dishes for visitors.
The development is expected to create 15 direct jobs, boosting employment in the region. The architectural approach balances old and new, preserving the building’s heritage while adding contemporary touches. The Kitchery at Coleburn will open its doors in late 2023, offering a mix of fine dining and local flavours. The project supports both economic growth and sustainable practices, setting a strong foundation for the wider Whisky Resort development.
