Sítio Santar reimagines Portuguese cuisine with a May 23 grand opening

Sítio Santar, a newly reinvented restaurant in the heart of Portugal, is preparing for its grand opening on May 23. The venue, previously known as Memórias, has welcomed Inês Beja—formerly of DeRaiz—as its new head chef. Currently in a soft-launch phase, the restaurant is already serving hotel guests while fine-tuning its menu. The restaurant’s approach centres on local, indigenous ingredients, staying true to regional culinary traditions. Beja and her team are testing dishes that either preserve or reimagine classic recipes. Examples include Trouxa de couve com migas e caldo de coentros and Carolos de milho, both reflecting the kitchen’s philosophy.

Inside, Sítio Santar offers seating for 32, with a terrace that expands capacity to 64. The wine list will focus on selections from Santar and the nearby Dão region, complementing the menu’s emphasis on local flavours.

The official launch on May 23 will mark the restaurant’s full opening to the public. Until then, the team continues refining their offerings, ensuring a balance between tradition and innovation. With its soft opening underway, Sítio Santar is set to welcome all diners later this month. The menu, rooted in regional produce and heritage, will pair with wines from the surrounding area. The restaurant’s blend of tradition and creativity aims to offer a distinct dining experience in the region.
