Savory Ice Cream Takes Over as Bold Flavors Redefine Dessert Trends
Ice cream lovers are now seeking more than just sweet treats. Tammy Keefe, CEO of Clementine's Ice Cream, notes a growing demand for bold, savoury flavours that push traditional boundaries. From cheese-infused scoops to spicy barbecue twists, unusual combinations are taking over freezer aisles and social media feeds.
The trend began gaining traction over the past decade, with subtle savoury hints creeping into classic desserts. Brands like Salt & Straw, with over 50 US locations, now serve flavours such as pear and blue cheese or Arbequina olive oil. Their menu reflects a shift toward adventurous eating, blending salty, tangy, and umami notes into frozen treats.
Keefe's own experimentation started with a manchego ice cream, layered with truffles and honey—a nod to one of her favourite appetisers. Other standout flavours across retailers include Salt 'n Pepper Vanilla, Miso Cherry, and even a fiery Jersey Devil, mixing barbecue spices with caramelised hot honey. OddFellows, Jeni's Splendid Ice Creams, and Morgenstern's have also embraced the movement, offering options like cheddar cheese with Ritz crackers or bay leaf cheesecake. Looking ahead, Keefe predicts more cheese-based creations on the horizon. Potential future scoops could feature goat cheese with candied brisket and fig, or ricotta swirled with balsamic and toasted pistachios. The appeal lies in balancing richness with unexpected twists, turning dessert into a full-flavoured experience.
Savory ice cream has moved from niche curiosity to mainstream fascination. Social media buzz and expanding retailer menus prove its staying power. As brands continue innovating, the line between dessert and daring cuisine keeps blurring.
