Russia sets first national shawarma standard by year's end

Russia is developing its first national standard for shawarma. A technical committee is leading the project, which aims to set clear rules for ingredients, preparation, and food safety. The new guidelines are expected to be finalised by the end of this year. The upcoming GOST standard will cover key aspects of shawarma production. It will define approved ingredients, preparation techniques, and shelf-life requirements. Even minor details, such as whether carrots can be included, will be addressed.

Elena Saratseva, deputy head of Roskachestvo, shared updates with RIA Novosti. She confirmed the committee’s focus on ensuring consistency and safety in shawarma sold across the country. Beyond shawarma, the group is also working on standards for other traditional Russian dishes. The initiative follows growing demand for uniform quality in popular street food. Once published, the standard will provide clear benchmarks for vendors and manufacturers.

The new shawarma standard will bring stricter guidelines for ingredients, storage, and preparation. Businesses will need to comply with the rules once they take effect. The final version is set to be released before the year ends.
