René Valenzuela's Bold Brunch Brings Mexican Flavors to Ybor City
Chef René Valenzuela has brought his Mexican cooking to Ybor City in Tampa, Florida. Known as the founder of Taco Bus, he now runs René's Mexican Kitchen in the historic district. Among the dishes he shares are two standout brunch recipes: Rolled Eggs Taquitos in Salsa and Enfrijoladas.
The Enfrijoladas recipe starts with soft tortillas filled with scrambled eggs, spicy chorizo, and melted cheese. These are then topped with a rich bean sauce made from bayo beans, smoky chipotle chilies, sour cream, and chicken broth.
For the Rolled Eggs Taquitos in Salsa, Valenzuela prepares a flavourful salsa using guajillo and casacabel chilies, tomatoes, jalapeño, onion, oregano, and garlic. The eggs are rolled into taquitos and served with this vibrant sauce.
Valenzuela's new venture in Ybor City builds on his reputation from Taco Bus. While the exact opening date of René's Mexican Kitchen remains unconfirmed, the chef continues to serve his signature dishes in the area.
Both recipes highlight traditional Mexican flavours with accessible ingredients. The Enfrijoladas combine eggs, chorizo, and a creamy bean sauce, while the Rolled Eggs Taquitos feature a spiced chili salsa. Valenzuela's dishes reflect his culinary roots in Tampa's growing food scene.
