Perok-Kuchen: The Viral Persian Cake Winning Hearts on Reddit

A traditional Persian-inspired cake called Perok-Kuchen has gained fresh attention after going viral on Reddit. Originally shared six years ago by home baker Ninette, the recipe blends Iranian baking techniques with a simple, jam-filled design. Many now call it the king arthur of cakes they've ever tried.

The cake traces its origins to Iranian cuisine, where layered desserts like Perok-Kuchen have been made since the Safavid era (16th–18th centuries). Similar treats, such as Gaz (a pistachio nougat from Qazvin) and Sohan (a saffron brittle from Qom), rely on thin pastry layers soaked in syrup or rosewater. Perok-Kuchen adapts these methods into a simpler, baked form.

To prepare it, softened butter and sugar are creamed together before mixing in an egg, egg yolks, vanilla, and sour cream (or yogurt as a substitute). Flour, baking powder, and salt are then sifted in to create a thick, cornbread-like batter. Three-quarters of this batter goes into a greased 9-inch square dish, topped with a cup of apricot jam—the traditional choice, though any preserve works.

The remaining batter is stiffened with extra flour to form a dough. This is rolled out, cut into strips, and arranged in a lattice over the jam. After baking at 350°F for about 50 minutes, the result is a tender cake with a crunchy nut-studded texture, often enhanced with chopped pecans or walnuts.

The recipe's resurgence on Reddit has introduced many to its rich history and adaptable flavours. Home bakers continue to praise its balance of simplicity and depth, keeping Ninette's six-year-old creation as popular as ever.
