Hummer & Kilt: Star Chef from Canada Returns to Mainz

Nova Scotia's 'Kilted Chef' Takes Over Mainz with Seafood Feast

The 'Kilted Chef' Alain Bossé is bringing a taste of Nova Scotia to Mainz this month. Known for celebrating his Canadian roots, he will take over the kitchen at the Hyatt Regency’s Bellpepper restaurant from June 13 to 21. Guests can expect a menu filled with regional specialities from his homeland. Bossé, who hails from Nova Scotia, will serve a tasting menu featuring snow crab, scallops, and Atlantic salmon fillet. Each dish comes paired with a cocktail, while dessert includes blueberry bread pudding and whiskey ice cream. For those preferring à la carte, options like whole Canadian lobster, lobster bisque, and blueberry-glazed ribs will be available.

The chef’s residency also introduces bar and lounge snacks, such as a grilled lobster cheese sandwich and loaded lobster fries. True to his nickname, Bossé will cook in his signature Scottish kilt—even while working in the kitchen. The special menu runs daily from 6:00 PM to 9:00 PM during his stay.

The event offers Mainz diners a chance to experience Nova Scotia’s culinary traditions firsthand. Bossé’s residency at Bellpepper runs for nine days, with his dishes available exclusively during evening service. Reservations are likely to be in high demand.
