A new cookbook brings traditional recipes from the Egerland region back to life. Karin Lorenz-Scheuenstuhl has collected dishes passed down from her parents, Erna and Heinz Lorenz. Their family recipes now feature in True Treasures from the Egerland Kitchen – Recipes, Traditions & Verses. One standout dish is a hearty beef recipe, designed to serve four. It starts with 500g of beef, simmered for 2 to 2.5 hours in 1.5 to 2 litres of water. Root vegetables and seasonings join the pot until the meat becomes tender. Once cooked, the beef is sliced against the grain and kept warm in its broth, which is later strained for use in the sauce.
The sauce itself builds on the beef broth, using ¾ litre as a base. Grated kohlrabi and its leaves are cooked in the liquid, then thickened with a light roux. Two medium kohlrabi are needed for this step, adding a fresh, slightly sweet flavour. Another recipe, *Bachane Kniadla*, transforms stale bread into a simple dish. The bread is mixed with buttermilk and other ingredients, then baked until golden on both sides. The cookbook notes a medium difficulty level, with a total preparation time of around three hours for the full meal.
The recipes preserve the flavours of Egerland’s culinary past. Each dish combines straightforward techniques with seasonal ingredients. The cookbook ensures these family traditions remain accessible for home cooks today.
