A new Disney cookbook has just gone on sale, offering fans a chance to recreate park favourites at home. Delicious Disney Disneyland Resort: Recipes & Stories from The Happiest Place on Earth includes over 60 dishes to mark Disney100. Among them is a plant-based potato flautas recipe from Lamplight Lounge at Disney California Adventure park. The potato flautas start with boiled, mashed, and seasoned potatoes wrapped in corn tortillas. These are then fried until crispy. The dish is served with four toppings: plant-based soy chorizo, vegan piquillo crema, tomatillo-serrano sauce, and a fresh arugula escabeche salad.
The vegan piquillo crema blends silken tofu with piquillo peppers, lime juice, and vegetable oil. Roasted garlic puree, cilantro, salt, and a pinch of cayenne pepper add depth to the mixture. For the tomatillo-serrano sauce, tomatillos and serrano chiles are boiled with garlic, then blended with avocado, spinach, salt, and oil. The arugula escabeche salad brings a bright contrast. It combines arugula, thinly sliced Fresno pepper, red onion, and cilantro. A squeeze of lime juice and a sprinkle of salt and black pepper finish the mix.
