Creamy Plant-Based Mac and Cheese Gets a Nutrient-Packed Makeover
A new plant-based macaroni and cheese recipe has been shared by nutrition expert Jim Perko. Known for his raw food philosophy, Perko has designed a dish that avoids dairy while keeping rich flavours. The recipe uses whole ingredients like sweet potatoes, tofu, and whole-grain pasta as its base.
The dish starts with 12 ounces of whole-grain pasta, cooked until tender. For the sauce, 28 ounces of peeled and diced sweet potato are boiled until soft. The sauce also includes 12 ounces of extra-firm tofu, blended with 4 cups of unsweetened almond milk.
Seasonings play a key role in the flavour. The recipe calls for 1 teaspoon of salt, 1 teaspoon of Dijon mustard, and 1/4 teaspoon of nutmeg. A touch of heat comes from 1/4 teaspoon of black pepper and two pinches of cayenne. Finally, 8 ounces of shredded rice cheese alternative are mixed in to create a creamy texture. Perko, a naturopath and author of *The Miracle of Raw Food*, focuses on nutrient-dense, enzyme-rich meals. His approach emphasises detoxification, immune support, and alkalisation—principles he applies even in cooked dishes like this one.
The finished dish combines whole-grain pasta with a velvety, spiced sauce. It avoids dairy but keeps a familiar comfort-food taste. Perko's version aligns with his long-standing belief in plant-based nutrition for health and healing.
