A hardy Australian shrub could soon play a bigger role in human diets. Old Man Saltbush, known for its drought resistance, is gaining attention as a highly nutritious food source. Recent studies highlight its potential to boost protein and mineral intake while thriving in harsh climates.
Old Man Saltbush (Atriplex nummularia) grows naturally across arid regions of Australia. Its ability to survive extreme conditions makes it a promising crop for sustainable farming. Research shows the plant is packed with essential minerals, including calcium, iron, phosphorus, zinc, and sodium.
When ground into powder and added to wheat flour, the shrub significantly enhances nutritional value. Tests found that saltbush-enriched pasta delivered nearly half an adult's daily protein needs in a single serving. The protein quality rivals or surpasses that of soy, pea, and rice proteins. It also fills gaps in wheat-based diets by providing key amino acids like lysine and tryptophan.
In one experiment, mixing saltbush powder into noodles doubled the protein content and increased dietary fibre eightfold. Despite these findings, no large-scale pilot studies or commercial food products using the ingredient have been widely documented. Most current applications focus on livestock feed or nutritional supplements rather than consumer-ready foods.
Experts stress the need for collaboration with farmers and food processors to scale up production. Future research will examine long-term health effects, including gut health benefits, as well as consumer attitudes toward saltbush-based products.
Old Man Saltbush offers a climate-smart way to diversify diets and improve nutrition. Its high protein and mineral content, combined with drought resistance, positions it as a valuable crop for future food systems. Further testing and industry partnerships will determine how soon it appears on supermarket shelves.
