China's Spring Festival traditions meet modern twists in 2026 food trends

Spring Festival traditions in China remain strong, with classic dishes like Chunjuan and Jiaozi still dominating celebrations. Yet, new trends are emerging as younger consumers embrace creative twists on seasonal foods. From long queues for qingtuan in Shanghai to surging online orders for wild vegetables, the spring market is evolving beyond its usual offerings. In Beijing's Xinfadi market, around 800 tons of spring vegetables arrive daily, making up 4 percent of total vegetable trade. Meanwhile, online demand has spiked for seasonal greens like amaranth, broad beans, and shepherd's purse, with Taobao Flash Sale reporting a sharp rise in orders since March. Searches for spring vegetables on Meituan have also climbed by 17.4 percent year-on-year since mid-March.

Traditional spring treats are getting a modern makeover. On March 27, 2026, customers lined up outside Wangjiasha's flagship store on West Nanjing Road to buy qingtuan. Taobao Flash Sale has introduced unconventional flavours like red bean with malted milk, coconut durian, and Thai salted cheese. Other seasonal snacks—cherry blossom biscuits, spring bean biscuits, and mugwort tortillas—are also selling well. Beyond food, the spring consumer market is expanding into new areas. Nature-based experiences and cultural activities are gaining traction. On Douyin, views for spring tea products have soared by 1,140 percent year-on-year, with Longjing tea alone seeing a 484 percent increase. Wild vegetables and elaborate spring feasts remain popular, but the market now caters to a wider range of interests.

While classic spring dishes continue to define celebrations, fresh trends are reshaping consumption habits. Online platforms and creative flavours are drawing younger buyers, and demand for seasonal produce is growing. The shift reflects a broader move toward diverse experiences, blending tradition with modern tastes.
