Chester's La Brasserie names Matthew Ramsdale as new Head Chef

The Chester Grosvenor’s La Brasserie has named Matthew Ramsdale as its new Head Chef. The restaurant, a well-loved fixture in Chester for over two decades, is also welcoming two rising talents to its kitchen team. Changes come as the venue prepares to roll out a fresh menu in the coming weeks. Ramsdale steps into the role after two and a half years as Sous Chef at La Brasserie. He takes over from Gareth Jones, who previously led the kitchen. Known for shaping the restaurant’s concept and high standards, Ramsdale now plans to introduce innovative, seasonal dishes with ingredients from local suppliers.

A new 'Light Bites' menu will launch soon, offering diners more casual options. Alongside Ramsdale’s promotion, Joshua Robbins has been appointed Sous Chef. Robbins climbed the ranks from apprentice, earning his place in the leadership team. Completing the trio of appointments is Daniel Wynne, who joins as Junior Sous Chef. The reshuffled team brings a mix of experience and fresh ideas to the long-standing Chester favourite.

The leadership changes mark a new phase for La Brasserie as it refines its menu and dining experience. With Ramsdale at the helm, the restaurant aims to build on its reputation while introducing contemporary twists. The updated 'Light Bites' menu and focus on local produce will debut in the near future.
