Pavel Ledrov, head chef at Pier Restaurant, has shared a gourmet recipe for crispy glazed sablefish. The dish features deep-fried fillets coated in a sweet and spicy sauce, paired with a vibrant vegetable stir-fry. Known for its firm white flesh and mild taste, sablefish offers a delicate flavour without a strong fishy odour. The recipe begins with sablefish fillets, seasoned lightly with salt and coated in starch. These are then deep-fried at 180°C (350°F) for 3-4 minutes until golden and crisp. While the fish cooks, a glaze is prepared by combining sweet chilli sauce, soy sauce, and fish sauce.
For the vegetable garnish, bell pepper, zucchini, eggplant, ginger, garlic, and cilantro stems are stir-fried with a splash of soy sauce. The fried sablefish is then tossed in the glaze, ensuring an even coating. The dish is finished with a sprinkle of fresh cilantro leaves, microgreens, and toasted sesame seeds before serving. Sablefish, also called Magadan ruff, is valued for its tender yet firm texture. Its subtle taste makes it ideal for bold glazes and aromatic sides.
