Chef Eddie Adams Unveils a Caribbean-Inspired Comfort Food Masterpiece

A new Caribbean-inspired comfort food dish has been shared by Chef Eddie Adams, known for his work at Loaded Potato in Clearwater. The meal combines tender short ribs, fragrant coconut rice, and lightly spiced sautéed cabbage. Adams, trained in classical cuisine, now focuses on hearty, flavourful dishes.

The centrepiece of the dish is the Short Ribs, which start with 3 lb of meat seasoned simply with salt and pepper. The ribs are first browned in a Dutch oven or oven-safe pan before being slow-cooked. The cooking liquid includes onions, garlic, thyme, bay leaf, hot sauce, smoked paprika, ketchup, brown sugar, browning sauce, chicken bouillon, bell pepper, and beef broth. Once assembled, the dish bakes in the oven for 2.5 to 3 hours, allowing the flavours to meld and the meat to become fork-tender.

The Coconut Rice is made by simmering 1.5 cups of jasmine rice with 1.25 cups of water, a can of coconut milk, a teaspoon of sugar, and a pinch of salt. The rice cooks until the liquid is fully absorbed, resulting in a creamy, slightly sweet base for the meal. This step takes about 20 minutes.

To complete the dish, Sautéed Cabbage is prepared by thinly slicing a small head of green cabbage. It is cooked with onions, garlic, sugar, and dried thyme until soft, then finished with salt, pepper, and a splash of apple cider vinegar for brightness. The cabbage is ready in roughly 16 minutes.

The recipe brings together rich, slow-cooked meat with quick, aromatic sides. The short ribs require the most time, while the rice and cabbage come together in under half an hour. Together, they form a balanced, comforting meal with Caribbean influences.
