Four Weeks of Renovation: Café Hilda Set to Open in Wiesbaden on May 2
For the past four weeks, renovation work has been underway at 77 Schwalbacher Straße. In just a few days, on May 2, Café Hilda will celebrate its grand opening at this location. Residents of Mainz already know the small cookie shop well—now, the Wiesbaden branch is set to become a spacious, full-sized café.
Seven years ago, the Tehran-born entrepreneur arrived in Germany. To learn the language, she watched countless TV series and discovered NYC-style cookies—soft, filled treats with a sweet center. Over three years, she perfected her own recipes before successfully opening her first café in Mainz.
A Regular Customer Brings Hilda to Wiesbaden
"Just four square meters," she tells Merkurist, describing the tiny kitchen at her Mainz location. For the 28-year-old, that wasn't nearly enough space—between daily operations and a steady stream of catering requests, she needed a larger production kitchen. It was one of her loyal Wiesbaden customers who suggested the Schwalbacher Straße location. "In the end, we were invited to Wiesbaden," Hilda says.
The former children's café now offers seating for 35 guests, with an outdoor area that will expand next year. The basement will host an event space for workshops and private gatherings.
New Flavors and Classic Favorites
Alongside Mainz's bestselling cookies, the Wiesbaden menu will feature three new varieties and the café's signature pudding-matcha drinks. A brunch menu will offer Scandinavian-style breakfasts, bowls, and open-faced sandwiches (Stullen), with sourdough bread supplied by Mainz's Brot Bassing bakery. Hilda emphasizes her commitment to regional ingredients and fresh, homemade dishes.
"This café should be a place for everyone," she says. "No matter your mood—whether you're feeling down, lonely, meeting a friend, or just need a spot to work or study—you're welcome here." The planned workshops and events will create more opportunities for connection, including yoga sessions and craft nights.
Fresh Daily at Both Locations
Hilda's husband will take over day-to-day operations at the Mainz shop, allowing her to focus on Wiesbaden. "I'll bake the cookies here and bring them to Mainz every morning," she explains. The new café's opening celebration runs from 10 AM to 5 PM on May 2.
Café Hilda is open Wednesday through Sunday, 10 AM to 5 PM.
