Bryan O'Kelly redefines Southern cuisine as Husk Nashville's new chef
Bryan O'Kelly has taken the helm as Executive Chef at Husk Nashville, bringing a fresh take on Southern cuisine. His journey began in Charleston, where he first stepped into a professional kitchen. Now, he’s shaping a menu that blends tradition with local flavours. O'Kelly’s career started humbly, washing dishes in a Charleston restaurant. Over time, he moved into cooking and trained under chef Sean Brock at McCrady’s. There, he also learned from Ben Norton, who became a key mentor.
At Husk Nashville, he’s crafted a menu rooted in Southern classics but with modern twists. Dishes like shrimp and grits and pimiento cheese get a creative update. Carolina Gold rice and benne seeds often feature in his cooking, tying back to his Carolina roots.
The restaurant grows much of its own produce in an onsite garden. These fresh ingredients go into both the food and the cocktails. Despite rising food costs, O'Kelly keeps affordability in mind. He also gives his sous chefs the freedom to experiment with bold ideas in the kitchen.
His aim is simple: to give guests an unforgettable taste of Nashville. Husk Nashville now serves a menu that reflects O'Kelly’s Southern heritage and local focus. The garden-to-table approach ensures freshness, while his leadership fosters creativity in the kitchen. Diners can expect familiar flavours with a thoughtful, modern edge.
