Brick Street Farms shares three vibrant recipes using homegrown produce
Brick Street Farms in St. Petersburg, Florida, has grown from a small hydroponic operation into a major urban farming leader. Since 2017, the farm has expanded to over 1 million square feet of greenhouse space, supplying thousands of pounds of fresh produce weekly. Alicia Geigel, a representative from the farm, recently shared three healthy recipes featuring their homegrown ingredients.
The farm now plays a key role in local food security, meeting over 50% of the region's leafy green demand. It also tackles food deserts by donating produce and partnering with schools and community centres. Geigel's recipes highlight the farm's fresh output, starting with a Sweet & Savory Salad packed with kale, apples, dried cranberries, pecans, and sharp cheddar. The dish also includes roasted sweet potatoes, red chili flakes, and a tangy dressing made from lemon, apple cider, maple syrup, and mustard.
Her second recipe, Latin Lettuce Wraps with Sofrito Aioli, combines roma tomatoes, green bell peppers, and yellow onion for the sofrito base. The filling features extra-firm tofu seasoned with Sazón or Adobo, wrapped in butter or Bibb lettuce, and topped with avocado, red onion, and a creamy aioli. The final dish, Swiss Chard with Garlicky Yogurt and a Crispy Egg, uses fresh chard sautéed with olive oil and garlic. It's served with a dollop of lemon-infused Greek yogurt, a fried egg, and a sprinkle of chili crisp for heat.
These recipes showcase Brick Street Farms' commitment to fresh, locally grown food. The farm's expansion and community efforts ensure wider access to nutritious produce across St. Petersburg. Residents can now enjoy seasonal dishes while supporting sustainable urban agriculture.
